Incredible food and wine experience. My wife and I had one of the best restaurant experiences of our lives yesterday at Elysèe in Park Hotel Vossevangen. We were lucky enough to be hosted by sommelier Robert Rosales Johansen all evening and his pairings was spectacular. Their new menu is just about a week old and our three course set menu was precoursed with an amuse bouche consisting of a peeled cherry tomato and chevre. very tasty and went perfect with my Sancerre Domaine Vacheron. (I should mention that we chose the wine celler package priced at NOK 950, per person which you should choose as well : I won 't go through all the details of our meal, but the most highlighted between the consistent highlights was a deconstructed plukkfisk consisting of perfectly prepared clipfish, a reduced bechamel with nutmeg, some al dente vegetables and a sauce that gave the dish the correct amount of acidity. Wonderful with the previously mentioned Sancerre. I also have to mention that the wine package included such wines as a 2007 burgundy grand cru that almost brought tears to my eyes, some exciting rieslings, a white burgundy with a nose to die for and an incredibly complex sweet champagne. Elysèe uses a teqnique that allows them to pour a glass of wine without opening the bottle and hence have one of the most extensive wine charts by glass. That the restaurant is beatifully located with views to Vossevangen and the green mountains with a bit of snow on the tops just adds to the experience.
